Emphasizing the quality of the grapes , soil fertility and environmental protection organic farming was chosen .Chatzivaritis Estate focuses on the Greek varieties of Xinomavro, Negoska, Roditis and Assyrtico, and also cultures the popular Sauvignon Blanc , Merlot , Chardonnay and Cabernet Sauvignon in smaller areas.
