Wilfried Valat settled in the heart of Roussillon, in Calce, in 2007 with the aim from the start of offering wines different from the local classicism. Here, no yeasts, no large-scale production, no grape harvesting machines, and no acidification of the wines. Wilfried aims to deliver natural wines, without additives or manipulation. In another life, this stubborn and passionate man was a biochemist based in Dijon, Burgundy. His goal: to apply Burgundian principles to the magic of these Catalan terroirs.
